Mixed Greens Salad with Cranberries and Walnuts

Do you ever go out to eat and order a dish that, when it comes to the table, you think, "Damn, I could do this at home and it would be so much better"? Not that it's bad at the restaurant! Just that you know that you could make it at home and you'd put your own spin on it. There's something about the restaurant experience that will forever make me adore going out to eat, but most of the time I finish my plate and think, "I'm going home and recreating this, except I'll use this instead of that ... Shrimp Tacos with Cilantro-Lima Crema

Happy National Taco Day! Did you know that last year, Americans ate over 4.5 billion tacos? That's A LOT of tacos. And why not? Who doesn't love a small tortilla shell, crispy or not, corn or flour, filled to the over-flowing brim with spicy fillings and fixings? Judging by the number 4.5 billion, the answer to that question is, "no one". This Taco Tuesday, trade in the traditional ground beef and shredded cheese taco for a healthier and slightly more sophisticated (don't yell at me, beef ... Continue Reading

Simple Swaps for Fewer Calories

One of the things that I do on a regular basis to save on calories is swap healthier foods in for more calorie dense foods. The simple swaps will help you save calories through out the day without skimping on flavor. Greek Yogurt instead of Sour Cream Plain, low fat Greek yogurt is a great, healthy alternative to sour cream. This is one of the simple swaps that I make on a daily basis. You can sub in yogurt for sour cream ounce for ounce and save 44 calories, 53 calories from fat and gain 2 ... Continue Reading

Tomato Watermelon Salad

There is something magical about eating dinner outside on a summer night. Summers on the lake mean hot days and warm nights. They also mean family and friends gathered happily on the lawn, waiting for sunset and watching the sky turn colors typically seen in glow-in-the-dark roller skating rinks. Perfect bite for a night like that? Garden fresh tomatoes, creamy avocado, sweet melon and fresh herbs. This recipe is inspired by a photo of a salad that I see constantly when browsing through my ... Continue Reading

Seared Marlin with Avocado-Mango Salsa

Kajiki is the Hawaiian name for Blue Marlin. Here in Hawaii, Kajiki/Marlin can grow to be close 2,000 pounds - can you imagine snorkeling quietly, bubbles floating to the surface, minding your own business, only to look under your right fin and see a 2,000 pound fish with an enormous bill playing tag behind you?! Not that they do that (they might, I don't know), but think about it. Jaws in real life. DuunnDun. Duuuuun Dun. The good news is, Kajiki is super tasty and probably doesn't chase ... Avocado Beet Salad with Toasted Pepitas

Beets have not always been my favorite vegetable. Growing up, all I knew were Beautiful Beets, which was a dish of mashed purple vegetables and sour cream that did not do it's name justice. I've lived to learn that beets aren't always mashed with sour cream, they aren't always bright purple, they aren't always called beautiful but they are delicious. And they happen to be super good for you. Recently, my man and I had dinner at Mud Hen Water in Honolulu. Very rarely do we leave a ... Continue Reading
